Ethiopia is the genetic home of arabica. In the southern highlands, coffee still grows under shade trees on smallholder plots, often mixed with enset, fruit, and subsistence crops. Grade 1 lots are sorted for density, screen size, and defect count — the same discipline that lets a bag of Yirgacheffe or Guji taste clean and floral rather than woody or flat.
When we talk about “from seed to cup,” we mean the full chain: farm elevation, cherry selection, natural drying, export grade, import, roast, and your kettle. Skipping any link shows up in the cup.
Why altitude and soil matter
Higher elevation slows cherry maturation. Sugars and acids develop more complexity; the bean is denser. Yirgacheffe’s volcanic soils and cool nights favor citrus and florals. Sidamo’s varied microclimates produce layered berry and wine-like cups. Guji’s high volcanic basalt and cool nights push tropical fruit and jasmine with a silky body.

Natural process, explained simply
Natural (dry) process means cherries dry with the fruit still on the seed. Done well, you get sweetness and fruit character without ferment defects. Done poorly, you get harsh or muddy flavors. We only buy natural lots that cup clean at Grade 1 — then we medium-roast to balance sweetness and structure without burying origin.
